Earlier this week, I shared a tropical salsa recipe that you all loved as much as I do (if you haven’t checked it out yet, take a peek here!). So today, in honor of the fourth of July weekend, I’m sharing a crowd-pleasing recipe that won’t disappoint – a Tomato Avocado Salsa Recipe.
This Tomato Avocado Salsa Recipe is a twist on the classic pico de gallo with added ingredients like corn and avocado. Each bite has a refreshing, bold punch of flavor that will leave you craving more. I made this recipe for a picnic I was having with my girlfriend and had Ryan taste-test it and had to pull it away from him before it was all gone!

Fresh Tomato Avocado Salsa Recipe
Prep time: 10 minutes
Total time: 10 minutes
Yield: 4-6 servings
Ingredients:
1 avocado, peeled, pit removed and diced
1/3 cup corn (I used canned)
4-5 roma tomatoes, chopped
1/3 cup red onion, diced
Parsley to taste (optional)
Dressing:
3 tablespoons olive oil
1/8 teaspoon cumin
1/8 teaspoon black pepper
1/8 teaspoon chili powder (I used Trader Joe’s Chili Lime Seasoning Blend)
1/4 teaspoon salt
Juice of one lime
Parsley (or cilantro) to taste (optional)
Instructions:
1. In a bowl, whisk together the oil, seasonings and juice.
2. Combine all vegetables in a bowl and toss with the dressing, mixing thoroughly.
3. Cover and refrigerate for at least one hour.
4. Serve with tortilla chips, or use as garnish over salmon or tacos.
