Today I’m sharing the quickest, easiest breakfast recipe that is oh-so-delicious. Ever since I went dairy-free, one of the meals I missed most was my lox bagel. So, I decided to play with the ingredients a bit and test it out with the next best thing to cream cheese – avocados, duh! For those that aren’t dairy-free, it’s still a great, healthy alternative if you want to give it a try. Let me know what you guys think!

Dairy-Free Lox Bagel
Yield: 1 Lox Bagel
Total time: 5 minutes
INGREDIENTS
1 bagel of your choosing, sliced in half
1 avocado
½ package Nova Lox (I used the Ducktrap brand from Whole Foods)
Sliced cucumbers
Salt and pepper to taste
INSTRUCTIONS
Using a fork, mash the avocado and evenly spread on both avocado slices.
Spread desired Nova Lox amount on top of the avocado (I usually have left overs that I store in a Ziploc bag in the fridge for the next day).
Top with cucumber slices and sprinkle salt and pepper to taste.
