I can’t believe Thanksgiving is this week! I’ve mentioned this in my previous posts, but Thanksgiving is a new-ish holiday for my side of the family. It’s not a holiday that is celebrated in Poland, so growing up we would treat it like any other day with an added bonus – two extra days off work and school to focus on decking our house out for Christmas and taking advantage of all the Black Friday sales. We would go to Gurnee Mills mall on Thanksgiving Day, shop till we dropped, and then would coordinate a fashion show in our hallway modeling all our new clothes to our parents 😊
Then, Ryan came into the picture and while shopping is still a key part of the day (obvi!), celebrating Thanksgiving has become a welcomed tradition – especially by my parents! It’s the one time during the year where they kick back, relax and the kids take hold of their kitchen to cook a wholesome, American meal for them to enjoy. We get quality time to goof off, Ryan re-confirms his suspicions that I can cook, and we officially kick off the season!
Over the years, I’ve enjoyed incorporating a new dish to our menu – it allows me to try something different and also expands my family’s palate (win-win!). This year, I knew exactly what I wanted to do – make my friend Kari’s famous Roasted Brussels Sprouts with Bacon recipe! Now, this may not be ground-breaking to those that grew up on Thanksgiving dishes, but she made this last year for our annual Friendsgiving and I died over it. I went back for seconds and thirds because it was soo good! She came over this past weekend, taught me her tricks and gave me the recipe for my sharing. Kari’s Famous Roasted Brussels Sprouts with Bacon Recipe
Prep time: 15 minutes
Cook time: 40 minutes
Total time: 50 minutes
Yield: 3-4 servings
Ingredients:
- 1 pound of Brussels Sprouts
- 5-6 strips of bacon (thick cut)
- 1½ tablespoon of olive oil
- Salt, pepper, and paprika, to taste
- ⅓ cup of Maple syrup
- ⅓ cup of Balsamic Vinegar
- 1 tablespoon chopped rosemary
Instructions:
- Preheat oven to 425⁰ F.
- Line baking pan with foil and set aside.
- Dice bacon into squares and set aside. Finely chop rosemary and set aside.
- Wash Brussels Sprouts, removing welted leaves from the exterior and cutting the Brussels sprouts in half. Put sprouts in baking pan, making sure they’re face up (because it helps give you that char we all want!).
- Season with salt, pepper and paprika. Drizzle olive oil on top, and using your hands, mix until fully coated. Top with bacon and bake in oven for 35 minutes (or until brown on the edges).
- In a small saucepan, combine rosemary, maple syrup and balsamic vinegar and stir on low heat for approximately 15 minutes.
- Remove Brussels Sprouts from oven and place in mixing bowl. Combine with sauce and mix well, until the Brussels Sprouts are evenly coated.
- Place Brussels Sprouts back in oven for five minutes.
- Remove, sprinkle with any remaining rosemary as garnish, and serve!
