Happy National Piña Colada Day! Not that we need reason to enjoy a nice cool drink in the summertime, but hey, I’ll take it 🙂 I’m not going to lie, I love Malibu and have indulged in a very simple Piña Colada – Malibu Rum with Coconut Liqueur mixed in a blender with ice – and although it’s tasty, I thought I’d try to make it from scratch, but still make sure it’s an easy Piña Colada recipe. I know, I know, some of you are wondering what’s gotten into me with all these recipes, but I think I do better with making drinks, haha!

This easy Piña Colada recipe is on the healthier side with only four ingredients and takes five minutes to make –  which is perfect since recipes with too many ingredients scare me . The drink itself did have more of a pineapple flavor than coconut so if you like coconut, I recommend increasing the amount of ice cream you put in or even try adding in some coconut milk for a more intensified flavor.

Easy Piña Colada Recipe

Yield: 1 serving

Prep time: 5 minutes

Total time: 5 minutes

INGREDIENTS

  • ½ cup frozen pineapple chunks (I got mine from Trader Joe’s)
  • ¼ cup pineapple juice
  • 2 big scoops dairy-free coconut ice cream
  • 5 shots Gold Rum (I used Captain Morgan)
  • Optional garnishes: fresh pineapple slices,  cherries, cute paper umbrellas

INSTRUCTIONS

Combine all ingredients into a blender (I used a Magic Bullet) and blend for approximately one minute. If the mixture is too thick add some more pineapple juice or even coconut milk. Pour contents into individual serving glass and enjoy! For garnish, you can top with a slice of pineapple and a cherry.
