Easter is here and I’m ready for all the eggs!! From decorating to eating them, I’m here for it all. This year, I decided to put my own spin not only on Easter Egg Decor, but also a classic dish served around this time of year – Deviled Eggs! Now, I know there are a lot of deviled egg recipes already out there, but I wanted to add in a few ingredients of my own and share how to make them festive (I mean how cute are those bunnies!?) using garish. Make this recipe for Easter Sunday brunch, or on Monday if you have any leftover eggs from all the egg decorating you did (I know we always have plenty leftover!).
I tested this recipe out at my parent’s house a few weeks ago, and I’m happy to report, it was a hit 😁 Now, one of the ingredients I used isn’t typically used in traditional recipes – yogurt (dairy-free of course)! The yogurt (a great replacement for sour cream) added a lovely creaminess to the filling, but didn’t mask the other flavors. I made mine more plain, but of course, you can add in other spices to the filling to make them even more flavorful, like Dijon mustard, onion or garlic powder, or even cayenne pepper for a little kick.
To make the eggs more festive for Easter, my sister Angelika helped me decorate the faces into bunnies and chicks with a few ingredients we had around the house.

EASTER-THEMED DEVILED EGGS

Total time: 30 minutes
Yield: 16 servings
Ingredients:
- 8 eggs, cooked
- 1 tablespoon mayonnaise
- 1½ tablespoon plain, non-dairy yogurt (I used Kite Hill)
- 1½ tablespoon chopped chives, to taste
- Salt and pepper, to taste
Bunny Garnish Ingredients:
- 2 peppercorns for the eyes
- 2 1-inch, thinly-sliced carrots for the ears
- 1 eraser-sized carrot shaving for the nose
- 6 thinly-sliced cucumber shavings for the whiskers
Chick Garnish Ingredients:
- 2 peppercorns for the eyes,
- 1 small bunch of parsley for the top of the head
- 1 eraser-sized carrot shaving for the nose
Regular Garnish Ingredients, if desired:
- 1 tablespoon chopped chives sprinkled on top, to taste
- Smoked salmon, to taste
Instructions:
Remove the yellow yolk from each egg and place into a medium-sized mixing bowl. Add in mayonnaise, yogurt, chives, salt and pepper. Stir until combined.
Place mixture into a Ziploc bag. Snip off corner of the bag and pipe mixture into each egg white.
Garnish with desired toppings, noted above.
Chill in refrigerator until ready to serve.
