Dairy-Free Waffle Recipe

One of my most prized purchases during 2020 – and probably the only quarantine purchase that Ryan has been okay with – is most definitely our waffle maker! We hit a point in our first few weeks of lockdown where we were having major breakfast diner withdrawals and while I’m typically a savory vs. sweet breakfast gal, I couldn’t shake my craving for a crispy, bigger-than-your-head waffle experience.

Now when it comes to breakfast, we don’t mess around in the Manning household so you best believe we did our research before hitting buy on any appliance. This Amazon waffle maker ended up being the winner. It’s easy to use, affordable, compact (we don’t have a lot of kitchen storage), mess-free, and has nearly 12K five-star reviews to back it up! And I can vouch for its greatness..and do, in fact, every weekend on Instagram stories, haha. If you follow me, you know that Saturdays have officially been deemed, “Waffle Saturdays” (creative I know, haha), and although Ryan advised to maybe lay off the weekly waffle posts, don’t think I’m not scarfing one down behind the camera, lol.

This Dairy-Free Waffle Recipe is so good, I have to remind myself to slow down and enjoy the bite, otherwise, I blink and the waffle is gone. While we’ve mostly stayed true to the ingredients below, we’ve played with the amount of sugar since Ryan likes to taste health, and I like a bottle of maple syrup on top of my sugar. We also tried substituting the flour, for oat flour (literally ground up oats) and it worked out fine but was a bit too healthy for my liking.

If you’re hosting a brunch, consider mixing in a variety of different waffles to add texture and variety to your spread (I used homemade Belgian waffles, pumpkin-flavored waffles which I bought from the store, and Belgian sugar waffles from Whole Foods). Incorporate fruits of various colors like grapefruit, oranges, strawberries, blueberries, and kiwi, to serve as waffle toppings and also to bring pops of color to your table setting.

Dairy-Free Belgian Waffle Recipe

Prep time: 10 minutes
Total time: 10 minutes
Yield: 4 servings

Ingredients:
2 eggs
1 3/4 cups flour
1 tablespoon baking powder
2 tablespoons sugar
1/4 teaspoon salt
1 1/2 cups almond milk
6 tablespoons olive oil
1 teaspoon vanilla extract

Instructions:
1. Preheat your waffle maker – we have this one from Amazon.
2. Combine all ingredients in a mixing bowl and mix on low for 5 minutes. We use our KitchenAid mixer (such a great bridal shower gift!), but you can also whisk by hand until smooth.
3. Pour mixture into waffle maker and follow appliance instructions.
4. Top with desired spreads and enjoy!
